Blanc de Moi – Natural Sparkling Wine

Vineyard: Grown in Devići, Starići, and Funtana, on Istrian red soil (terra rossa), at altitudes between 20 and 60 meters above sea level. The Istrian Malvasia was hand-harvested in late August, seven days earlier than the standard picking time for fresh white wines. Pinot Blanc was harvested at full ripeness at the same time, through a careful grape selection process.

Grape Varieties: A blend of Istrian Malvasia and Pinot Blanc, where Malvasia dominates, ensuring an authentic Istrian identity in both aroma and taste, while Pinot Blanc adds complexity and aging potential.

Harvest: Last decade of August, ensuring optimal grape maturity.

Vinification: Hand-harvested Istrian Malvasia and Pinot Blanc, with direct pressing of free-run juice in pneumatic membrane presses. Alcoholic fermentation takes place at controlled low temperatures, followed by a carefully balanced blend and aging on fine lees for 8-16 months. During this phase, a partial malolactic fermentation occurs, enhancing texture and complexity. After lees aging, the wine undergoes secondary fermentation in the bottle, followed by a minimum of 24 months of aging before disgorgement.

Aging: Base wine ages in stainless steel tanks on fine lees for 8-16 months, while the secondary fermentation in the bottle is followed by at least 24 months of lees aging, ensuring depth and complexity.

Aging Potential: Enjoy immediately, or cellar under proper conditions for continued development over the next 3-5 years.

Tasting Notes: A lemon-yellow color, with the unmistakable aromas of Istrian Malvasia—hints of unripe white peach, apple, lemon, and lemon tart. Lees aging introduces refined brioche, fresh dough, and bread crust notes. On the palate, it is fresh, fruity, elegant, and dry, with fine and smooth perlage of medium length.
