Old Pilot’s Gin – Barrel Aged Gin is the celebrated gin of the distillery in slightly modified proportions.
They still use 6 Croatian plants from the Mediterranean and continental Croatia.
After distillation, gin is aged in several oak barrels of different types of wood, volume and preparation of the containers themselves.
Each barrel is not fired/toasted equally and each contributes in its own way to the complexity of the final product.
American oak contributes sweetness, vanilla and smoke aromas, while Croatian oak brings pleasant bitterness and dried fruit.
