Harvest: Hand-picked and cold-pressed immediately after harvest

Color: Intense olive green immediately after pressing, or golden yellow with green reflections as it matures
Aroma: Fruity, with notes of green apple and a hint of spiciness
Taste: Spicy, bold, and characteristic of young extra virgin olive oil
A blend of three premium varieties—Pendolino, Istrian Bjelica, and Leccino—produced through cold pressing after hand harvesting from our estate groves. The olive groves are located in Santa Lucia, near our single vineyard sites, in the Valle Bay area and on the winery estate.
