Black sparkling wine created by maceration and fermentation that lasted fifty days.
After that, it was aged for one hundred and fifty days on fine lees in stainless steel, and then transferred to bottles for fermentation for 50 months.
Classic ruby colors of Pinot Noir.
Gently beading in the glass, it quickly reveals aromas of black fruit, blackberry, blackcurrant, black spicy chocolate and delicate pepper, and at the end a little fresh apple. Its taste is fresh, the tannins are pleasant, fine and lasting, and the freshness and fruity taste in the mouth call for the next sip.
A wide glass suits him, a burgundy one for a calm pinot noir.
It reminds of a calm red wine, but it is more refreshing and offers a fused taste of chocolate with chili and fruit.
This Black Pearl should be allowed to air out and then served a little warmer than other sparkling wines.
