A one-day maceration period suggests a relatively short but efficient extraction process. After cold maceration, the must undergoes fermentation in stainless steel tanks. Controlled fermentation involves careful monitoring and regulation of various factors to ensure a stable and predictable fermentation process. After fermentation, the wine is aged in stainless steel tanks until mid-February, suggesting a relatively short aging period, allowing the wine to develop complexity while retaining vibrant fruit flavors. Overall balanced, elegant medium body and full flavor intensity. For pairing with food, it will go well with blanched asparagus on a salad with egg and apple vinegar cream, cuttlefish carcass in ceviche marinade with green pepper and elderflower syrup, and the like. For a glass, choose flutes, and they will show their full potential chilled at a temperature of 10 to 12 °C.
