Sauvignon blanc 2023 – Fairly colored, clear, greenish-yellow in color, lively greenish reflections on the edges. An announcement of softness through many, slow, wine tears. Upon opening, white pepper rises as the dominant first aroma. Some graffiti and the smell of ripe quince. With time and an increase in the temperature in the glass, the aroma of asparagus and elderflower opens up. In the mouth, freshness, lightness of alcohol, pleasant softness and gentle minerality. All this owes to the careful vinification process. Grape harvesting begins early in the morning to preserve the aroma, natural acidity and freshness of the grapes. Hand picking ensures that only the best grapes are selected, reducing damage to the berry. After harvesting, the grapes undergo cold maceration for 24 hours. This process helps extract aroma, flavor and color compounds from the grape skins while minimizing the extraction of harsh tannins. A one-day maceration period suggests a relatively short but efficient extraction process. After cold maceration, the must undergoes fermentation in stainless steel tanks. Controlled fermentation involves careful monitoring and regulation of various factors to ensure a stable and predictable fermentation process. After fermentation, the wine is aged in stainless steel tanks until mid-February, suggesting a relatively short aging period, allowing the wine to develop complexity while retaining vibrant fruit flavors. Overall balanced, elegant medium body and full flavor intensity. For pairing with food, it will go well with blanched asparagus on a salad with egg and apple vinegar cream, cuttlefish carcass in ceviche marinade with green pepper and elderflower syrup, and the like. For a glass, choose flutes, and they will show their full potential chilled at a temperature of 10 to 12 °C.
