Pinot Noir 2022 – Pinot black, a variety that requires exceptional attention in the vineyard, but ultimately rewards the winemaker’s patience with a wine with an irresistible aroma. The creation of Šoškić winery’s pinot noir begins with care and attention in the vineyard, in the heart of the Rebri location, on the slopes of the beautiful Plešivice region. The philosophy of wine production at the Šoškić winery emphasizes quality over quantity, which results in small yields that concentrate the essence of the fruit. After fermentation, the wine is poured into 500-liter barrels for aging. Here it matures for 12 months, allowing it to develop complexity and depth with a subtle integration of oak nuances. After aging in the barrel, the wine is bottled and left to rest for an additional 6 months in a controlled cellar environment. This phase of aging in the bottle further enhances the character of the wine and ensures that it is perfectly balanced and ready to be enjoyed after release. The entire process, from the vineyard to the bottle, reflects the commitment of the Šoškić winery to create an exceptional Pinot Noir that captures the essence of the Plešivica terroir and shows the skill and expertise of the winemakers and winegrowers who make it. Šoškić winery’s pinot noir has a beautiful young, clear, lively, ruby color, aromas of ripe cherries, marasca cherries, butter, wood, toast, cooked plums, black earth and baked raspberry tart. In the mouth it is soft, fresh, fruity, brilliantly balanced with the addition of a gentle minerality that gives it a delicious taste on the tongue. The tannin is few, ripe, with an extremely fine texture. Serve it in a large burgundy glass at a temperature of 16 celsius with duck, goose roasted with mince in poultry fat, roast beef with raspberry or strawberry coulis and many dishes of medium to strong structure, of medium intensity of aromatics, with side dishes of stronger structure.
