The oil is of clear green-golden color, of an expressed aroma of the green olive fruit and aromatic herbs. Recognizable for its dominant bitterness, persistent piquancy, and a note of sweetness of a ripe banana.
It blends well with hearty food (such as grilled meat), bitter vegetables, ripe cheeses, desserts with dark chocolate.
The first Istrian cooperative of extra virgin oil producers was founded at the very end of 2019. The worldwide success of Istrian olive oils is also since the region lies on the northern border of growing where olives give their maximum and produce rich and beautifully aromatic olive oil.
